Olivante Early Harvest Ayvalık is a distinctive production made exclusively from Ayvalık olives. The olives are harvested during a short window, while still green and just beginning to turn pink—an ideal timing that allows the oil to develop a fresher, more aromatic, and well-balanced character.
Within the first hours after harvest, the olives are cold-pressed at temperatures below 27°C, preserving Ayvalık’s signature fruitiness, high nutritional value, and natural texture.
